Preheat the oven to 350, and in a mixing bowl add

5 eggs, beat them and then stir in

2 1/2 tbsp flour and stir in

1 can evaporated milk (not sweetened condensed)

Next stir in 1 box of thawed frozen chopped spinach (squeeze out the water)

1/2 cup chopped onion,

2 cups shredded swiss cheese (that’s one of the regular size bars, 8oz)

and about 1/3 pound of browned crumbled bacon (the best is to get the Applegate brand ‘Sunday bacon’ and use half the pack)

Stir it all together and split between two frozen pie shells.

Bake for about 45 min – 1 hour – when it’s a little browned and a knife stuck in the center comes out clean, it’s done.

Cool and serve with salad if you’re feeling fancy, eat giant wedges right out of the fridge if you’re in a hurry for a good lunch the next day.Image
