I love my cast iron skillet!  This is one chicken breast that was marinated overnight while it thawed in 2 tbsp soy sauce, a few drops of liquid smoke, 2  tbsp lime juice, a half tsp of chopped garlic, a dash each of red pepper and coarse ground black pepper.  To the chicken I added a half an orange bell pepper and some red onion.

Here is is finished with some salsa and cheddar on top:
